My Favorite Fall Recipes

I love Pinterest, who doesn’t, but whenever I search for recipes I can’t help but wonder if they are actually good. In fact, I just made a chicken chili recipe that I found on Pinterst that was pretty flavorless. So, if I can assist in your search for delicious fall recipes, let me share a few of my favorites!

Pioneer Woman Chicken Tortilla Soup -just plain every single thing I’ve wanted in Chicken Tortilla Soup. So good!

Apple Fritters -The more tart the apple the better! And these are best enjoyed on the same day they are made!

Homemade Mac and Cheese -I didn’t include a photo above because the photos I took for this recipe were so horrendous but this is so delicious and filling. It contributes basically no nutritional value, but sometimes thats okay #yolo

Pioneer Woman Frito Chili Pie -I make this so often in the cooler months. My husband loves chili and this reheats so well! Is also great on a baked potato!

Parmesan and Spinach Orzo (awesome with parmesan crusted chicken on top!) -My mom and I just made this a few weeks ago and it was so delicious! Make sure the pasta is cooked before you start the sauce, you don’t want the sauce to sit and thicken for too long!

Pioneer Woman Pot Roast -Just bursting with flavor and comfort.

I love fall food, don’t you?

iowgirleats.com is my favorite site and 90% of her recipes are easy and healthy. She also has a few posts of her fav fall recipes all grouped together you can probably search for on the site. Her favs of mine are her spaghetti squash and meatballs, her chicken gumbo recipe, and any of her balsamic vinegar recipes

I love my white chicken chili. It’s probably more like Chicken Tortilla soup, actually. We don’t like mashed beans.

1 rotisserie chicken, chicken pulled off and diced, use bones to make broth
saute an onion, if you have time
add large can of diced tomatoes
add 2 cans white beans
add frozen corn
whatever salsas you love, I like hot & fruity together (like Frontera’s chipotle + something with peach or mango)
garlic
cumin

I took Shauna Niequist’s recipe from Bread and Wine and took it a little further. It’s sooooo good.

either cornbread muffins or Xochitl tortilla chips to go with it
