The Best Strawberry & Chicken Salad with Poppyseed Dressing

I never thought I was a fruit + chicken + salad person until I tried this salad dressing at my friend Caroline’s house. I actually can’t remember if she served chicken with the strawberry + spinach salad but I DO remember how good this dressing was and I demanded the recipe the next day.

I’ve shared this on Instagram but I wanted to have an easy place to reference it for the future!

Caroline’s Poppyseed Dressing // makes approx. 1/2 cup of dressing (which breaks down to enough dressing for 3 salads)

1/4 cup mayo

1/4 cup sugar (I usually do a scant 1/4 cup here but the more sugar you use the sweeter it is)

1 tablespoon White Wine Vinegar

1/8 cup milk

Poppyseeds to taste (I typically shake in about 1-2 teaspoons)

Mix ingredients in a jar or container, shake well, and store in the refrigerator.

For the salad, I like to use a 50/50 mix of a variety of greens and spinach. I’ll add rotisserie or grilled chicken, sliced strawberries, and toasted pecans. Drizzle with dressing and enjoy!

This salad is really filling and I absolutely love to make it for a quick and easy lunch during the week. A few folks have suggested adding feta cheese to the salad, which could be delicious.

You could add apples or blueberries into the mix if you love fruit!
