Apple Pie and Fritters

Apple Picking with Mom
This has turned out to be an apple-y week! That might, just might, have something to do with the crispness of fall in the air and the apple picking trip a few days ago. I just
 made an apple pie, and my mom made apple fritters this morning.
The pie crust was made using this recipe from The Pioneer Woman. The inside of the pie, however, was made with this recipe, without the topping. It could have used a little bit more cinnamon. Can you believe they only called for 1/8 teaspoon? Crazy.
And here are Mom’s Apple Fritters. 

Delicious for breakfast, lunch or dinner. That goes the same with any doughnut type food. Can be eaten at any meal as far as I’m concerned.
Apple Fritter Recipe
Ingredients:
1 beaten egg
1 cup milk (or like my mom says, “melk”)
1 cup finely chipped or grated apple (we used granny smith this morning)
1/4 cup sugar
1/2 tsp salt
3 tbsp orange juice
1/2 tsp vanilla
2 cups flour
1 tbsp baking powder
dash of cinnamon
vegetable oil for frying
1. Heat your oil to approx. 350 degrees on the stovetop. 
2. In a bowl combine beaten egg, milk, chopped/grated apple, sugar, salt, cinnamon, OJ, and vanilla. 
3. Stir together flour and baking powder.
4. Fold dry mixture into wet mixture. Do not over mix. Mix just until combined.
5. Drop batter by rounded teaspoons into hot oil. Fry until deep golden brown, about 3-4 minutes turning once.
6. Once cooled a bit, roll in cinnamon & sugar and place on a plate.
7. Then watch as they disappear because they will be eaten immediately. 🙂

Apple fritters are my favorite!!! I have to try that recipe! Have you ever tried them dipped in strawberry yogurt? Sounds odd but I swear its fantastic.
