I can easily get bored of salads unless they are filled with various *extras*. Simple romaine lettuce with dressing and shredded carrots gets old really quick, but add a handful of other nutritious and flavorful toppings like avocado, tomatoes, and peppers and it suddenly feels upgraded and will definitely be more filling in the end.

One of my favorite summer salads is a Caprese Salad. I shared the recipe on Instagram (click here!). Beyond that, I really like starting with some of the mixed bags of salads are various grocery stores. Trader Joe’s, Harris Teeter, and Costco all have really fresh and delicious chopped salad mixes that only need a few extras to make it a hearty lunch. Avocado is my go-to when I need to add a bit of fat, but I also love grilled or shredded chicken too!

The croutons in the first pic look unreal! I’ve definitely been feeling the switch to fresh salads as the weather is heating up. Can’t believe summer is here!

If you love chicken and avocado, you need to try Organically Addison’s Avocado Chicken Salad! It’s basically chicken, avocado, and bacon. So good and so filling!
