Spicy Cucumber Salsa

My friend Rebecca makes this MEAN cucumber salsa and I finally remembered to ask her for the recipe. She told me the ingredients, and a rough measurement of what she uses, but admitted she just adjusts everything to taste.

I typically do better following an exact recipe, but I was up to the challenge to try to duplicate her cucumber salsa!

Spicy Cucumber Salsa

3 whole cucumbers, chopped

2 jalapeños, chopped small

1/2 red onion, chopped

1/4 cup packed cilantro, roughly chopped

a squeeze of 1/2 of a lime

1 tbsp olive oil

salt to taste

Stir cucumber, jalapeños, red onion and cilantro together. Add olive oil and lime juice. Stir and let sit for 2 minutes. Taste, add salt, and adjust other ingredients as necessary.

I love a lot of cilantro so the more the merrier in my opinion. And I actually have some growing in a pot on my deck!

I’d highly recommend pairing this yummy salsa with a Margarita, as that is my absolute favorite drink in the summertime, but you do you.

This looks delicious. I admit although I love salsa, I’m not the biggest fan of chunky tomatoes. This is the perfect alternative!

Loved this recipe! I forgot red onion on my grocery pickup order, so used a white onion instead. Seeded the jalapeños and I’m telling you what, it’s incredible! I did miss the color from the red onion, though, so definitely going to make sure I have that for next time. Also, I don’t usually go for foods that are too spicy. This recipe had just enough kick to it, but not so much that you miss any flavor.
