5 Quick Lunch Ideas with a Rotisserie Chicken

I’ve posed with a rotisserie chicken, y’all.

I’m always fascinated by reading articles online titled, “6 fridge staples everyone needs” and it always has some very obscure food item that I’ve never bought in my life.  But that is the thing about food: everyone has their own taste and preferences in order to prepare food that they love!

One thing I always like to have in my fridge for a quick meal is a rotisserie chicken. My favorite is from Costco but I’ll happily pick one up at any grocery store. If I have one in my fridge, I know that I can at least make a very simple lunch with some protein that will hold me over until dinner.

I’ll throw it on a salad, add it to a wrap with any other veggies I have on hand (topped with avocado of course!), or simply eat it as is on a small plate of fruit, cheese, nuts, and protein.

My go-to salad most of the summer was inspired by the Summer Salad from Panera. All I needed was fresh strawberries + greens + rotisserie chicken. I had all the other ingredients and the flavors were so fresh and summery that I really didn’t get tired of it. I also love this salad using Trader Joe’s Green Goddess dressing. Swap out the grilled chicken for rotisserie and it will come together very quickly!

Great ideas Kate! Rotisserie chicken can indeed be an assortment to so many different dishes; a must have in everyone’s fridge. I would suggest a wholesome omelette with chicken fillings or using them in stuffed peppers to get more creative.

Those recipes look delicious, especially the cranberry chicken salad! I like to add some diced jalapeno and poppy seeds in my cranberry chicken salad. It adds another dimension of flavor to the salad.
