Light Caprese Bites

At my sister’s engagement party, her friend Sam made the cutest little caprese bites as an appetizer. I loved how pretty they looked and she said they were really simple to make!

My friends and I hosted a baby shower for our friend Meg recently, and I thought that was the perfect time to recreate them!

I found fresh mozzarella pearls that had been marinating in a basil infused olive oil and that sounded mouthwateringly good to me!

Typing out a recipe here is pretty pointless as you can literally SEE all the ingredients, but you’ll need tomatoes (I used Cherry Tomatoes), fresh basil, and mozzarella pearls. You can also drizzle balsamic vinaigrette over top of these little apps, but I thought the marinated mozzarella provided enough flavor. The only thing I wish I did differently is sprinkle a touch of salt onto them.

Cut the tomatoes in half, as well as the mozzarella pearls depending on their size, and stack together on a skewer with basil in the middle!
